The Split & Mix Large 21″ attachment allows you to cook your food in your kamado QUATRO Large barbecue on 2 levels and distribute the heat optimally with the 2 glazed ceramic baffles. This versatile multi-level cooking system allows the cooking space to be divided into different zones, each with a different temperature or configuration. This provides great flexibility to cook multiple foods at once, each at its ideal temperature, while maximizing the use of the QUATRO Large’s interior space.
This kamado QUATRO Large 21″ Multi level Split & Mix cooking system consists of 6 elements:
- 2 x Half-moon grate 304L stainless steel
- 2 x Black enamelled half-moon deflector (thickness 20mm)
- 1 x 304L Stainless Steel Stand (Reversible)
- 1 x Stainless Steel Star

Here are the key elements of this Split & Mix system and its advantages:
– Modular stainless steel grids : allow you to superimpose several cooking levels. This allows you to cook food at different heights, allowing you to alternate between direct and indirect cooking without having to constantly move or adjust the food.
– Half-moon deflectors : used to create areas of indirect heat. They can be placed on the bottom of the kamado, under the grates, to diffuse heat evenly and gently, ideal for slow cooking or to keep food warm without burning it.
– The stainless steel star : this adjustable rack holder allows you to change the height of the racks to adapt to the needs of each cooking. This makes it easy to switch between direct and indirect heat depending on the nature of the food you are preparing.

These baffles are made of ceramic and are essential for indirect cooking and smoking:
– They act as a screen to limit the heat that dissipates from the flames to the food. They divert the heat towards the edges of the stone: convection of the heat which allows indirect cooking and smoking.
– They allow you to maintain a regulated and low temperature (limits too strong temperature rises) for so-called “Low & Slow” cooking
