The classic and unmissable barbecued camembert kamado !
Kamado is ideal for grilling a Camembert because it combines controlled heat, smoky flavor and perfect texture, making this dish even more gourmet and original.
Hardware
Ingredients
- 1 camembert ou 1 Mont d’Or ou tout autre fromage à pâte dure (avec sa boite en bois)
- 51 g de beurre de tourage 1
- 1100 g de beurre de tourage 2
- Miel
- Thym & Romarin
- Noix
- Salade verte
Light the kamado:
Heat your kamado by placing charcoal in the bottom and lighting it.
Once a layer of embers has formed and the temperature is 180°, you know that your kamado barbecue is ready to use. Install the Split & Mix with the heat deflectors so that you can cook “indirect”.
Prepare the Camembert:
Take the Camembert out of the plastic and its box.
Make an incision in the Camembert by making a cross in the centre of the Camembert.
Put a little honey and place sprigs of thyme and fresh rosemary.
Put the Camembert back in its box and wrap it in butcher paper.
Cook the Camembert:
Position for 20 minutes, turning it occasionally using the barbecue tongs.
For a Vacherin Mont d’Or or any other rind cheese, cook for 35 minutes.
Once the time is up, take the Camembert out of the kamado, place it in a dish without the paper and the wooden box.
Serve the Camembert:
With bread, salad or potatoes, enjoy!

Did you know?
Why is Camembert round?
Originally made with skim milk, this cheese had little staying power and tended to sag. To preserve its round shape, it was surrounded by 5 strips made of sedges, i.e. dried reeds, also known as cattails.
Why grill camembert on the kamado barbecue?
Grilling a camembert with kamado offers a unique and tasty culinary experience for several reasons:
1 – Slow and controlled cooking : thanks to its ceramic structure, the kamado allows for uniform and controlled cooking.
It maintains heat perfectly, which is great for grilling foods like Camembert.
This slow cooking allows the cheese to melt gently without burning it, while giving it a creamy texture on the inside.
2 – Smoky flavour : one of the great advantages of kamado is the possibility of adding a touch of smoke to your dishes, using wood chips or pieces of natural charcoal. Camembert, roasted in these conditions, slightly absorbs the smoky aromas, which enhances its flavor by providing a delicious woody note.
3 – Crispy crust : by placing the Camembert directly on the grill of the kamado or in a suitable container, the heat creates a golden and crispy crust while maintaining the heart of the cheese melting.
This contrast of texture is particularly appreciated.
4 – Ease of seasoning : When grilling a Camembert, it’s easy to add herbs, olive oil, garlic, or even walnuts directly on top.
Kamado allows these ingredients to caramelize slightly, intensifying the flavors.
