How do I choose my brazier?

There are different types of braziers, each with its own characteristics. We reveal the criteria to take into account to make the right choice.

Question n°1 – how thick is the plancha?

What thickness of plancha for a high-performance brazier?

The plancha is the centerpiece of your brazier, and that’s why at COEO we have chosen a 10mm thick plancha.

After interviewing many restaurant professionals, we made 2 major observations:

  • Below 10mm : the plancha may deform under the effect of heat;
  • Above 10mm : the plancha is more difficult to heat. The heating inertia is too great. For example, according to many event professionals, 12mm thick cooktops are often far too slow to heat up, require a lot of fuel to ignite and heat up

Question n°2 – does my plancha have a peripheral edge?

Beware of braziers with external edges on the plancha!

Our plancha is inclined from the manufacturing process, so that the fat flows perfectly in the direction of the plancha’s inclination.

Why is the plancha rim not recommended?
– User safety: risk of injury when handling. More dangerous than a plancha without rims
– Hygiene: risk of food deposits that are difficult to dislodge
– Design: materials used for welding are not recommended for use in contact with food

Question n°3 – Is the plancha inclined as soon as it is made?

How is our plancha made?

Your brazier is first and foremost a cooking tool, so it is necessary to think carefully about the flow of fat. And this is right from the process of making the brazier!

Note – A good inclination of the plancha is not an inclination that is only under the effect of heat. Your plancha must also be tilted cold from the moment it is manufactured.

How do I know if my plancha is inclined during the manufacturing process?

Position a level on the plancha and check that there is a slope between the outer end and the inner end (centre of the brazier bowl).

Question 4 – how is the airflow done?

AIRFLOW & DRAUGHT

A brazier is like a fireplace, it needs a good supply of oxygen to function properly. Air cannot enter the hearth only from the top of the brazier hearth. It must arrive in an ascending manner, rising to feed the fire from the bottom up.

At COEO, the air flow passes through the double wall of the shelf support and up into the fireplace. This allows for a continuous and optimised supply of air to the fire bowl bowl.

Be careful, a fireplace with a poor oxygen supply has many disadvantages, including:
– Ignition difficulties
– Difficulties in maintaining the fireplace at heating temperature
– Annoying fumes

Question n°5 – Are the laboratory visits carried out?

COMPLIANCE WITH STANDARDS & SAFETY

In France, the European Union and abroad, specific standards govern the design and use of cooking tools such as braziers.
Some brands and manufacturers do not have to deal with these tests and market products without being sure that they can be used as cooking tools.

We have taken the time to test the materials we use to ensure that they are suitable for use with food contact.

Likewise, we have also carried out rigorous specifications to ensure that our products pass all the required fire prevention tests.

Question n°6 – Which material to choose?

CORTEN STEEL

Corten steel is a noble and exceptional material that is known for its self-protection. Natural corten steel is made of an alloy of copper, phosphorus and chromium which ensures perfect durability over time.
Be careful not to confuse Corten steel with “rusty” steel / with acid oxidation!

BLACK POWDER-COATED STEEL

Be careful, if you choose a powder-coated brazier, it is important to check 2 points:
– Is the paint used resistant to high temperatures?
– Is a surface treatment carried out before powder coating?

Question n°7 – Which design to choose?

Sleek Design is the Secret to Longevity! No draft or ash hatch…

We have excluded from our design, any draft hatch or ash trap! These elements are not durable and do not hold up well over time. Indeed, any steel element that rises to high temperatures risks deforming. These hatches and drawers always end up not being used or removed because they disrupt the proper functioning of the brazier!
